Honey Fennel Gingerbread

This recipe makes 2 pounds of gingerbread
- 6 ounces canna-butter
- 1 cup water
- 1/4 cup olive oil
- 3/4 cup honey
- 1/4 cup milk
- 1/4 cup full-fat plain yogurt
- 2 large eggs, beaten
- 1 1/2 cup unbleached white flour
- 2 teaspoon ground ginger
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 tablespoon fresh grated ginger
- 2 teaspoon crushed fennel seed
Preheat the oven to 325 degrees, add parchment paper to a loaf pan. Place 6 ounces of canna-butter into a medium saucepan, keep on low heat until the butter has melted. Remove the lid and add olive oil, yogurt, and milk; whisk until mixed. In a medium-sized bowl, mix the flour, ground ginger, baking powder, and baking soda. Cook fennel seeds on low heat for a few minutes to toast. When done, crush the fennel seeds and mix them with fresh ginger, eggs, and honey into a saucepan. Pour the honey mixture into the dry mix, one-third at a time, whisking in-between. Pour the combined batter into a loaf pan, bake for 50-60 minutes until top is shiny and golden. Remove pan from heat and allow gingerbread to cool for 15-30 minutes before serving.

This recipe makes 32 candies
- small amount vegetable oil for greasing pan and parchment
- 1 cup heavy cream
- 1/4 cup canna-butter
- 1/4 cup butter
- 3/4 cup granulated sugar
- 3/4 cup dark brown sugar light or dark
- 1/2 cup corn syrup light or dark
- 1/2 teaspoon salt
- 1 1/2 cups pecans or walnuts toasted, chopped
- 1 1/2 teaspoons vanilla extract
Lightly oil a 5x9 inch loaf pan, then line with parchment paper. Place cream into a large saucepan, add canna-butter and butter then stir on medium heat. Stir in sugar, brown sugar, corn syrup and salt, then cook for 1 minute. Remove lid and attach a candy thermometer to pan, cook until mixture reaches 254 degrees F. Remove heat and quickly stir in nuts and vanilla, pour mixture into the prepared pan. Let the mixture cool, then cut into 32 individual candies.
Fruit and Nut Chocolate Bites

This recipe makes 50 chocolates
- Chocolate chips
- Canna-butter OR
- Butter or coconut oil to infuse
- Nuts, dried fruit, or other additions for the chocolate (optional)
Add 2 cups of chocolate chips into a double boiler, then stir on medium heat. When the chocolate is almost melted, add in 1 1/2 tbsp of canna-butter and small chunks of fruit or nuts. Stir until everything is melted together. Pour mixture into mold and let it sit at room temperature for a couple hours.
